Truffle Goat Cheese Mushroom Crostini

Ingredients
  

  • 1 lbs Mushrooms assorted
  • 5 oz Truffled goat cheese used Montchevre Betin Fresh Truffle Goat Cheese
  • 2 tsp Thyme fresh
  • 2 tbsp Spicy honey Mike's Hot Honey or Bees Knees
  • 2 tbsp Olive Oil
  • 1 Baguette
  • Salt & Pepper to taste

Method
 

Crostini Bread
  1. Preheat oven to 350 degrees
  2. Brush baguette slices with olive oil, then arrange on a sheet pan in a single layer
  3. Bake for 12 min
Mushroom mix
  1. Mix in a bowl the slices of mushrooms with the olive oil, thyme, salt, and pepper
  2. Spread out on a sheet pan and bake them until browned and caramelized, about 15 minutes
Set up Crostini
  1. Spread about a tablespoon of the goat cheese on each crostini
  2. Top with mushrooms, honey, sprinkle fresh thyme
  3. Pair with a Pinot Noir. ENJOY!
